Curried Chicken Salad

Calories: 240 (approximately)
Turn your left-over chicken into a spicy part of the simple salad. Combining a little curry powder and some fat free yogurt turns a boring salad into a zesty, spicy and tangy bowl of green goodness.

All you need is:
1 cup plain fat free yogurt
1/2 cup halved grapes, or 1/4 cup raisins
Dash of salt
2 teaspoons curry powder
1/4 cup walnuts (optional)
Lettuce
2 cups of chopped leftover chicken

Preparation
Mix the fat free yogurt with grapes or raisins, some curry powder, and a dash of salt. You can add walnuts if required (1/4 cup). Chop the lettuce, and place into each of 4 bowls. Mix the chopped chicken with the yogurt mixture, and spoon on top of a bed of lettuce. You can serve immediately, or leave it to chill in the fridge until ready to serve.
